This warming butter chicken recipe is perfect for those nights as the weather gets cooler. It’s also full of anti-inflammatory herbs and spices – which we love!
Yummy! Quick! Easy! Nutritious!
Ingredients
- 2 tbsp coconut oil
- 1 brown onion, thinly sliced
- 4 garlic cloves, minced
- 1 tsp fresh ginger, thinly sliced
- 1kg organic chicken breast fillets cut into 3cm pieces.
- 1/2 tsp ground cinnamon
- 2 tsp ground paprika
- 3 tsp garam masala
- 1 tsp ground cardamom
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp ground turmeric
- 400g coconut cream
- juice of 1 lemon
- 300g passata
- 1 tsp sea salt
To serve:
- 1 large head of broccoli, chopped and steamed
- fresh coriander leaves
- brown rice
- greek yoghurt
Method
- Cook rice according to packet instructions, set aside.
- Heat coconut oil in a large frying pan over medium-high heat. Add onion, garlic and ginger and saute until soft.
- Add chicken and saute for 5-5 minutes or until the chicken begins to change colour.
- Add spices to the pan and combine well with the chicken.
- Add coconut cream, lemon juice, pasta and salt and reduce the heat to med-low. Simmer over a medium heat covered, for about 20 minutes or until the chicken is cooked through and the sauce begins to thicken.
- Serve with rice, steamed broccoli, fresh coriander and a dollop of greek yoghurt.
